CHICKEN CAESAR PASTA SALAD

Stir-fry of chicken breast, red onion, broccoli and water chestnuts with a sauce made with peanut butter, soy sauce and ground ginger, Prepare and Enjoy Chicken Caesar Pasta Salad.

PREP TIME: 10 Mins     COOK TIME: 20 Mins     SERVINGS: 4

INGREDIENTS

– 170 grams dry fettuccine pasta, uncooked
– 2oo grams MeatonClick’s Boneless Chicken Breast, grilled and diced, Order Here
– 1 can Diced Tomatoes, drained
– 2/3 cup Light Creamy Caesar Salad Dressing
– 1/4 cup chopped red onion
– 250 grams chopped romaine lettuce
– 1/4 cup shredded Parmesan cheese

DIRECTIONS

1. Break pasta strands in half. Cook according to package directions, omitting salt. Rinse with cold water to cool quickly; set aside.

2. Stir together chicken, drained tomatoes, dressing & onion in large bowl. Add cooked pasta.

3. Add lettuce to pasta mixture; toss to coat ingredients evenly with dressing mixture. Sprinkle with cheese.

Serve immediately.

TIPS

-Serve with freshly ground black pepper.
-Substitute penne pasta for fettuccine pasta.
